Instructions
- Step 1: Preheat your oven to 350°F (175°C). This ensures that your muffins bake evenly.
- Step 2: Grease your muffin tin with non-stick spray or line it with muffin liners to make removing the muffins a breeze.
- Step 3: In a large mixing bowl, mash the ripe bananas with a fork or potato masher until smooth. You want about one cup of mashed bananas.
- Step 4: Add the almond butter, eggs, milk, maple syrup (if using), and vanilla extract to the mashed bananas. Stir until well combined.
- Step 5: In a separate bowl, mix the oats, sea salt, and ground cinnamon. Ensure everything is evenly distributed.
- Step 6: Gradually add the dry oat mixture to the wet ingredients. Stir until just combined. If you’re using chocolate chips, fold them in gently at this point.
- Step 7: Scoop the batter into the prepared muffin tin, filling each cup about 3/4 full. This allows room for the muffins to rise.
- Step 8: Place the muffin tin in the preheated oven and bake for 18-22 minutes or until the muffins are golden brown and a toothpick inserted in the center comes out clean.
- Step 9: Once baked, remove the muffins from the oven and let them cool in the tin for about 5 minutes. Then transfer them to a wire rack to cool completely. Enjoy warm or store for later!
Notes
- Make sure your bananas are very ripe for the sweetest flavor.
- If the batter seems too dry, add a splash more milk.
- Mix until just combined to avoid dense muffins.
- Check for doneness a few minutes early as ovens can vary.
