  • 1 pound shredded potatoes rinsed and drained
  • 2 tablespoons vegetable oil
  • 1 clove garlic minced
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 2 eggs at room temperature

Method
 

  1. Start by shredding your potatoes using a box grater or a food processor. Squeeze out as much moisture as possible using a clean kitchen towel.
  2. In a mixing bowl, combine the drained shredded potatoes, vegetable oil, minced garlic, kosher salt, black pepper, and eggs. Mix until well combined.
  3. Preheat your waffle iron according to the manufacturer's instructions and lightly grease it with additional vegetable oil.
  4. Scoop about 1/2 cup of the potato mixture onto the center of the waffle iron. Close the lid and cook for about 5-7 minutes or until golden brown and crispy.
  5. Carefully remove the waffles from the waffle iron using a spatula and serve hot with your favorite toppings.
