Ingredients
  

For the Hummus:
  • 1 14-oz can chickpeas drained and rinsed
  • 1 small clove garlic minced
  • 3 tsp harissa any variety
  • 1 tsp sea salt
  • 1/2 tsp cumin
  • 1 tsp lemon juice
  • 2-3 tbsp water or olive oil for blending
For the Rolls:
  • 2 carrots julienned or thinly sliced
  • 1 red bell pepper thinly sliced
  • 3 cups fresh greens arugula, spinach, or baby kale
  • 4 sushi nori rolls

Method
 

Instructions
  1. Step 1: Prepare the Hummus - In your food processor, combine chickpeas, garlic, harissa, sea salt, cumin, lemon juice, and water or olive oil. Blend until smooth.
  2. Step 2: Prepare the Vegetables - Wash and slice the vegetables. Julienne the carrots and thinly slice the red bell pepper.
  3. Step 3: Assemble the Rolls - Lay a sheet of nori on your cutting board, spread harissa hummus over it, leaving an inch at the top edge.
  4. Step 4: Add the Fillings - Place a handful of greens in the center, then add the carrots and bell pepper strips.
  5. Step 5: Roll It Up - Starting from the bottom, roll the nori tightly over the fillings and seal with water.
  6. Step 6: Slice and Serve - Use a sharp knife to slice the rolls into bite-sized pieces and serve with extra harissa or dip.

Notes

  • Store leftover hummus in an airtight container for up to a week.
  • Assemble rolls just before serving to avoid sogginess.
  • Experiment with different veggies for added texture.
