Ingredients
  

  • 1 lb halloumi cheese cut into fry-shaped strips
  • 1 cup all-purpose flour
  • 1/4 teaspoon salt
  • 2 tablespoons za’atar spice blend
  • 1 cup Mina Moroccan olive oil for frying
  • 1 cup Greek yogurt for dipping
  • 1 teaspoon garlic sauce
  • 1/4 teaspoon salt for the yogurt sauce
  • 2 tablespoons fresh herbs minced parsley, oregano, and mint
  • 1 tablespoon harissa sauce
  • 1 teaspoon lemon juice

Method
 

  1. Begin by cutting the halloumi cheese into fry-shaped strips, about 1/2 inch wide. This shape will ensure they fry evenly and get that perfect crispy texture.
  2. In a mixing bowl, combine the all-purpose flour, salt, and za’atar spice blend. The za’atar will add a delightful herby flavor that complements the halloumi beautifully.
  3. Dredge each halloumi strip in the flour mixture, making sure they are well-coated. Shake off any excess flour and set them aside on a plate.
  4. In a frying pan or deep skillet, heat the Mina Moroccan olive oil over medium-high heat. You want enough oil to submerge the fries, so about 1 cup should do the trick.
  5. Once the oil is hot (you can test this by dropping in a small piece of halloumi – if it sizzles, you’re good to go), carefully place the coated halloumi strips into the oil. Fry them in batches, ensuring not to overcrowd the pan, for about 2-3 minutes on each side until they are golden brown.
  6. Using a slotted spoon, remove the halloumi fries from the oil and place them on a plate lined with paper towels to drain any excess oil.
  7. In a separate bowl, combine the Greek yogurt, garlic sauce, salt, minced herbs, harissa sauce, and lemon juice. Mix well until everything is combined and creamy.
  8. Serve the halloumi fries hot, with the yogurt sauce on the side for dipping. Enjoy the crispy, cheesy goodness!

Notes

  • These fries are best enjoyed fresh, but can be stored in an airtight container for up to 2 days.
  • Reheat in a preheated oven at 375°F (190°C) to restore crispiness.
