Ingredients

For the Meat Mixture:
  • 1 pound ground lamb for rich flavor and tenderness.
  • 1 pound ground beef adds texture and balances the lamb.
  • 1 medium onion finely chopped for sweetness and aroma.
  • 4 cloves garlic minced to enhance the overall flavor.
  • 2 teaspoons dried oregano a classic herb in Mediterranean cooking.
  • 1/2 teaspoon dried marjoram adds a slightly sweet and floral note.
  • 1/2 teaspoon dried rosemary for a fragrant touch.
  • 1 1/2 teaspoons ground cumin delivers warmth and earthiness.
  • 1 teaspoon kosher salt to enhance the flavors.
  • 1/2 teaspoon paprika for a hint of smokiness.
  • 3 tablespoons bread crumbs to bind the mixture.
  • 1/2 teaspoon black pepper for a little heat.
For Assembly:
  • 8 pieces pita bread the perfect vessel for your fillings.
  • 1 cup tzatziki sauce creamy and refreshing topping.
  • 1 medium tomato sliced for freshness.
  • 1 small red onion thinly sliced adds crunch and sharpness.
  • 1 cup chopped lettuce to bring in some greens.

Equipment

  • Mixing bowl
  • Skillet or grill
  • Spatula or wooden spoon
  • Meat thermometer
  • Serving platter

Method

Cooking Instructions:
  1. In a large mixing bowl, combine the ground lamb and ground beef. Add the finely chopped onion, minced garlic, dried oregano, marjoram, rosemary, ground cumin, kosher salt, paprika, bread crumbs, and black pepper. Mix everything together until well combined.
  2. Take a portion of the meat mixture and shape it into oval patties or small logs, about the size of a small burger.
  3. Heat a skillet or grill over medium-high heat. Add a drizzle of olive oil if using a skillet. Once hot, place the patties on the skillet or grill and cook for about 4-5 minutes on each side, until they reach an internal temperature of 160°F (71°C) and have a golden-brown crust.
  4. While the meat is cooking, warm the pita bread in a dry skillet or wrap them in foil and place them in a preheated oven at 350°F (175°C) for about 5-10 minutes until soft and pliable.
  5. Once the meat is cooked and the pita is warmed, assemble the gyros by placing a few meat patties in the center of each pita, then topping with sliced tomatoes, red onions, chopped lettuce, and a generous dollop of tzatziki sauce.
  6. Wrap the pita around the fillings, securing it with a paper towel or foil if desired, and serve immediately. Enjoy your homemade gyros!

Notes

  • For a lighter version, try using ground turkey or chicken.
  • Use gluten-free bread crumbs for a gluten-free option.
  • Make tzatziki a day ahead to enhance flavors.
