Cooking Instructions:
- In a large mixing bowl, combine the ground lamb and ground beef. Add the finely chopped onion, minced garlic, dried oregano, marjoram, rosemary, ground cumin, kosher salt, paprika, bread crumbs, and black pepper. Mix everything together until well combined.
- Take a portion of the meat mixture and shape it into oval patties or small logs, about the size of a small burger.
- Heat a skillet or grill over medium-high heat. Add a drizzle of olive oil if using a skillet. Once hot, place the patties on the skillet or grill and cook for about 4-5 minutes on each side, until they reach an internal temperature of 160°F (71°C) and have a golden-brown crust.
- While the meat is cooking, warm the pita bread in a dry skillet or wrap them in foil and place them in a preheated oven at 350°F (175°C) for about 5-10 minutes until soft and pliable.
- Once the meat is cooked and the pita is warmed, assemble the gyros by placing a few meat patties in the center of each pita, then topping with sliced tomatoes, red onions, chopped lettuce, and a generous dollop of tzatziki sauce.
- Wrap the pita around the fillings, securing it with a paper towel or foil if desired, and serve immediately. Enjoy your homemade gyros!
