Ingredients
  

  • 14 ounces sweet potato peeled and diced into 1/2 inch cubes (about 2 medium)
  • 1 pound 93% lean ground turkey
  • 1/4 cup chopped onion
  • 2 tablespoons tomato paste
  • 3/4 cup canned black beans rinsed and drained
  • 3/4 cup corn kernels fresh or frozen
  • 1 large diced tomato
  • 1 jalapeño diced
  • 1 clove garlic minced
  • 2 tablespoons chopped cilantro plus more for garnish
  • 1 1/2 teaspoons cumin
  • 1 1/4 teaspoons kosher salt
  • 1/2 cup chicken broth
  • Lime wedges for serving
  • 4 ounces avocado sliced

Method
 

  1. Begin by peeling and dicing the sweet potatoes into 1/2 inch cubes. Chop the onion, dice the jalapeño, and mince the garlic. Having all your ingredients ready will make the cooking process smoother.
  2. In a large skillet over medium heat, add a splash of oil. Once hot, add the diced sweet potatoes. Cook for about 10 minutes, stirring occasionally, until they start to soften and get a bit of color.
  3. Push the sweet potatoes to the side of the skillet and add the ground turkey to the center. Break it up with a wooden spoon and cook until browned, about 5-7 minutes.
  4. Add the chopped onion, diced jalapeño, and minced garlic to the skillet. Stir everything together and cook for an additional 2-3 minutes until the onion becomes translucent.
  5. Stir in the tomato paste, cumin, and kosher salt. Mix well to ensure the turkey and vegetables are coated with the spices.
  6. Pour in the rinsed black beans, corn kernels, and diced tomato. Give everything a good stir to combine all the ingredients.
  7. Pour the chicken broth into the skillet, stirring to incorporate. This will help create a little steam to cook the sweet potatoes through. Cover the skillet and let it simmer for about 10 minutes.
  8. Once the sweet potatoes are tender, remove the skillet from heat. Stir in the chopped cilantro for a fresh touch.
  9. Serve the Ground Turkey Skillet hot, garnished with additional cilantro and slices of avocado. Don’t forget the lime wedges for a zesty squeeze on top!
