Ingredients
  

  • 1 tablespoon olive oil or avocado oil
  • 1 cup chopped onion
  • 1 lb. 93% lean ground turkey
  • 1 tablespoon tomato paste
  • 1 teaspoon ground cumin or to taste
  • 1 teaspoon sea salt or to taste
  • 2 medium zucchini cut into ½-inch pieces (about 12-14 oz.)
  • 1 cup canned black beans rinsed and drained
  • 1 cup corn kernels (fresh or frozen)
  • 2-3 small tomatoes diced (about 1 cup)
  • 1 medium jalapeño diced and seeds removed
  • 1 medium clove garlic minced
  • ½ cup water
  • 2 tablespoons chopped cilantro (plus more for garnish)
  • 1 tablespoon lime juice

Method
 

  1. Begin by heating the olive oil or avocado oil in a large skillet over medium heat. Once hot, add the chopped onion and sauté for about 3-4 minutes, or until the onions become translucent and fragrant.
  2. Add the ground turkey to the skillet, breaking it apart with your spatula. Cook for about 5-7 minutes, stirring occasionally, until the turkey is browned and cooked through.
  3. Stir in the tomato paste, ground cumin, and sea salt. Mix well to coat the turkey evenly and let it cook for an additional minute to enhance the flavors.
  4. Add the zucchini, black beans, corn, diced tomatoes, jalapeño, and minced garlic to the skillet. Pour in the ½ cup of water to help steam the vegetables, and stir everything together.
  5. Cover the skillet and let the mixture simmer for about 5-7 minutes, or until the zucchini is tender but still crisp. Stir occasionally to prevent sticking.
  6. Remove the skillet from heat and stir in the chopped cilantro and lime juice. Taste and adjust the seasoning if necessary.
  7. Spoon the Ground Turkey Skillet into bowls, garnishing with additional cilantro if desired. Serve warm and enjoy the burst of flavors!
