Ingredients

  • 1 tablespoon olive oil for sautéing the onions and garlic
  • 1/2 cup diced onion adds sweetness and depth to the filling
  • 2 cloves garlic minced
  • 1 pound ground chicken the star of the dish, lean and flavorful
  • 2 tablespoons taco seasoning a blend of spices that gives the tacos their signature taste
  • 1/4 cup water helps to cook the chicken and meld the flavors
  • 8 small corn tortillas the perfect vessel for holding all the delicious filling
  • 1/2 cup shredded lettuce for crunch and freshness
  • 1/4 cup diced tomatoes adds a refreshing touch
  • 1/4 cup shredded cheddar cheese for that melty, cheesy goodness
  • 1/4 cup fresh cilantro chopped, brightens up the flavors
  • Lime wedges for serving a squeeze of lime adds a zesty finish

Equipment

  • Large skillet
  • Spatula
  • Measuring cups and spoons
  • Knife and cutting board
  • Serving platter

Method

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the diced onion to the skillet and sauté for about 3-4 minutes until the onions are translucent. Then, stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.
  3. Add the ground chicken to the skillet. Use your spatula to break it up and cook until it's no longer pink, approximately 5-7 minutes.
  4. Sprinkle in the taco seasoning and pour in the water. Stir well to combine and let it simmer for about 5 minutes, allowing the flavors to meld and the mixture to thicken slightly.
  5. While the chicken mixture is cooking, warm the corn tortillas in a separate pan over medium heat for about 30 seconds on each side or until they are pliable.
  6. To assemble, take a warmed tortilla and fill it with the ground chicken mixture. Top with shredded lettuce, diced tomatoes, shredded cheddar cheese, and chopped cilantro.
  7. Serve the tacos with lime wedges on the side for a fresh squeeze of lime juice to elevate the flavors. Enjoy your homemade Ground Chicken Tacos!

Notes

  • Prep the ground chicken mixture in advance and store it in the refrigerator for up to 3 days.
  • Freeze the cooked chicken for up to 3 months; thaw overnight before reheating.
  • Assembled tacos may become soggy; store leftovers separately.
