Ingredients

  • 1 lb lean ground beef
  • 1 tablespoon chili powder
  • 1 1/2 teaspoons ground cumin
  • 1 teaspoon kosher salt
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon dried oregano
  • 1/2 cup water
  • 8 corn tortillas (flour can be used as an alternative)
  • Lettuce finely chopped
  • Cotija cheese or freshly grated Parmesan, for sprinkling
  • Shredded Mexican cheese blend or cheddar cheese
  • Pickled red onions
  • Pico de gallo
  • Guacamole or avocado
  • Sour cream or plain Greek yogurt

Equipment

  • Skillet
  • Spatula
  • Measuring spoons
  • Chopping Board
  • Serving platter

Method

  1. In a large skillet over medium heat, add the 1 lb of lean ground beef. Cook for about 5-7 minutes, breaking it apart with a spatula until it's browned and cooked through.
  2. Once the beef is browned, add the chili powder, ground cumin, kosher salt, smoked paprika, garlic powder, onion powder, and dried oregano. Stir well to ensure the beef is evenly coated with the spices.
  3. Pour in 1/2 cup of water to the skillet. Bring the mixture to a simmer, allowing it to cook for another 5 minutes. This will help to meld the flavors beautifully.
  4. While the beef simmers, warm the corn tortillas in a separate skillet over low heat for about 30 seconds on each side, or until they are pliable and slightly charred.
  5. To assemble, take a warm tortilla and spoon a generous amount of the seasoned beef into the center. Top with chopped lettuce, Cotija cheese, shredded cheese, pickled red onions, pico de gallo, guacamole, and a dollop of sour cream or Greek yogurt.
  6. Arrange your assembled tacos on a platter, and serve them with extra toppings on the side. Gather your loved ones, and enjoy a taco feast that will surely make everyone smile!

Notes

  • Use lean ground beef to keep the dish healthier without sacrificing flavor.
  • Don’t skip the simmering step; it’s crucial for melding the spices with the beef.
  • Feel free to mix in some beans for added protein and fiber.
