  • 2 cups Panko bread crumbs
  • 1/3 cup grated Parmesan cheese
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon kosher salt (plus more to taste)
  • 1/4 teaspoon freshly ground black pepper
  • 2 large eggs
  • 2 tablespoons olive oil
  • 1 small lemon (juice from, optional)

Method
 

  1. Preheat your oven to 425°F (220°C) for crispy fries.
  2. Line a baking sheet with parchment paper to prevent sticking.
  3. Wash and trim the fresh green beans, ensuring they are dry.
  4. In a large mixing bowl, whisk the eggs until well combined. In another bowl, mix Panko, Parmesan, garlic powder, salt, and pepper.
  5. Dip each green bean in the egg mixture, then roll in the Panko mixture until coated. Place on the baking sheet.
  6. Drizzle coated green beans with olive oil for golden crispiness.
  7. Bake for about 15-20 minutes, flipping halfway, until golden brown and crispy.
  8. Remove from the oven, let cool slightly, and serve with lemon juice if desired.

Notes

  • Trim green beans evenly for consistent cooking.
  • Don't overcrowd the baking sheet; give fries space to crisp up.
  • Add spices like paprika or cayenne for more flavor.
