  • 1 tablespoon coconut sugar
  • 1.25 cups skim milk
  • 1 egg
  • 3 tablespoons whole butter melted

Method
 

  1. Start by gathering all your ingredients and measuring them out. This will make the process seamless and enjoyable.
  2. In a large mixing bowl, combine the whole wheat flour, baking powder, kosher salt, and coconut sugar. Whisk together until well mixed.
  3. In a separate bowl, whisk together the skim milk and the egg. Melt the butter and let it cool slightly before adding it to the wet mixture.
  4. Pour the wet mixture into the bowl of dry ingredients. Gently stir with a whisk until just combined. Be careful not to overmix; a few lumps are okay!
  5. Preheat your griddle or non-stick pan over medium heat. Lightly grease it with a bit of butter or cooking spray.
  6. Using a ¼ cup measuring cup, pour the batter onto the hot griddle. Cook for about 2-3 minutes, or until bubbles form on the surface and the edges look set.
  7. Carefully flip the pancakes using a spatula and cook for another 2-3 minutes on the other side until golden brown.
