Ingredients
  

For the Donuts:
  • 1 cup Almond Meal
  • 1/2 cup Coconut Flour sifted
  • 1/8 teaspoon Salt
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Baking Soda
  • 2 Eggs
  • 1/4 cup Coconut Oil melted
  • 2 tablespoons Nonfat Plain Greek Yogurt
  • 1/4 teaspoon Vanilla Extract
  • 1/4 teaspoon Pure Almond Extract
  • 1/4 cup Honey
  • 1/4 cup Full-Fat Coconut Milk
For the Ganache:
  • 1/2 tablespoon Honey for the ganache
  • 3.5 ounces Semi-Sweet Chocolate chopped
  • Sweetened Coconut Flakes for garnish

Method
 

Directions
  1. Step 1: Preheat your oven to 350°F (175°C).
  2. Step 2: Lightly grease your donut pan with coconut oil or cooking spray.
  3. Step 3: In a large mixing bowl, combine the almond meal, coconut flour, salt, baking powder, and baking soda. Whisk together until well blended.
  4. Step 4: In another bowl, beat the eggs and add the melted coconut oil, Greek yogurt, vanilla extract, almond extract, and honey. Whisk until smooth.
  5. Step 5: Pour the wet ingredients into the dry ingredients and mix until just combined.
  6. Step 6: Slowly stir in the full-fat coconut milk until the batter is smooth.
  7. Step 7: Fill each donut mold about 3/4 full with the batter.
  8. Step 8: Bake for 15-18 minutes or until golden brown and a toothpick comes out clean.
  9. Step 9: Cool the donuts in the pan for 5 minutes before transferring to a cooling rack.
  10. Step 10: For the ganache, melt the chocolate with honey in a microwave-safe bowl, stirring until smooth.
  11. Step 11: Dip the tops of the donuts into the ganache.
  12. Step 12: Sprinkle coconut flakes on top of the ganache while it’s still wet.

Notes

  • Sift the coconut flour to prevent clumps.
  • Add a pinch of espresso powder for richer chocolate flavor.
