Instructions:
  1. Step 1: Prepare the Waffle Iron - Begin by preheating your waffle iron according to the manufacturer's instructions. Lightly grease the iron with cooking spray or melted unsalted butter to prevent sticking.
  2. Step 2: Mash the Bananas - In a mixing bowl, mash the 2 overripe bananas using a fork until smooth. The riper the bananas, the sweeter your waffles will be!
  3. Step 3: Mix Wet Ingredients - Add the cottage cheese, eggs, vanilla extract, and lemon zest (if using) to the mashed bananas. Whisk together until well combined and smooth.
  4. Step 4: Combine Dry Ingredients - In another bowl, mix the oat flour, baking powder, cinnamon, and a pinch of salt. Make sure there are no lumps in the flour for a smooth batter.
  5. Step 5: Combine Wet and Dry Mixtures - Gradually add the dry mixture to the wet mixture. Stir until just combined; be careful not to overmix! Fold in the fresh blueberries gently to avoid breaking them.
