Ingredients
  

For the Aebleskiver:
  • 2 cups gluten-free all-purpose flour a blend that mimics traditional flour
  • 1 tablespoon granulated sugar for sweetness
  • 1 teaspoon baking soda for light texture
  • 1/2 teaspoon baking powder to help them rise
  • 1/2 teaspoon xanthan gum for structure and elasticity
  • 1 teaspoon ground cardamom for flavor
  • 1 piece lemon zest of one
  • 1 teaspoon pure vanilla extract for sweetness
  • 1 3/4 cups buttermilk or milk with vinegar
  • 4 tablespoons butter melted and cooled
  • 3 large eggs separated into yolks and whites
  • Butter or oil for frying

Method
 

Instructions:
  1. 1. Prepare Your Ingredients: Gather all your ingredients and measure them out.
  2. 2. Mix Dry Ingredients: In a large mixing bowl, whisk together the gluten-free flour, granulated sugar, baking soda, baking powder, xanthan gum, ground cardamom, and lemon zest until well combined.
  3. 3. Combine Wet Ingredients: In another bowl, whisk together the egg yolks, buttermilk, melted butter, and vanilla extract until smooth.
  4. 4. Combine Wet and Dry Ingredients: Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. 5. Beat Egg Whites: In a separate bowl, beat the egg whites until soft peaks form.
  6. 6. Fold in Egg Whites: Gently fold the beaten egg whites into the batter until no white streaks remain.
  7. 7. Preheat the Aebleskiver Pan: Place your Aebleskiver pan over medium heat and add a small amount of butter or oil into each well.
  8. 8. Fill the Wells: Fill each well about two-thirds full with batter.
  9. 9. Cook and Flip: Let the Aebleskiver cook for about 2-3 minutes until bubbles form on the surface, then flip and cook for an additional 2-3 minutes.
  10. 10. Serve Warm: Remove the Aebleskiver from the pan and serve immediately with your favorite toppings.
