Ingredients
  

For the Marinade:

  • Kosher salt and pepper for seasoning the chicken and enhancing flavors
For the Pizza:
  • 1 sheet puff pastry thawed if frozen
  • 1 ½ cups broccoli florets fresh and vibrant
  • 1 cup shredded mozzarella or provolone cheese for that gooey topping
  • 1 large egg beaten for egg wash
  • 1 teaspoon water for egg wash
  • Parmesan cheese for topping

  1. Step 1: Marinate the Chicken - In a small bowl, combine 2 tablespoons of olive oil, minced garlic, crushed red pepper flakes, kosher salt, and pepper. Whisk together until well mixed. Place the chicken breasts in a resealable plastic bag or shallow dish and pour the marinade over them. Allow the chicken to marinate for at least 30 minutes, or up to 2 hours in the refrigerator for more flavor.
  2. Step 2: Grill the Chicken - Heat your grill or grill pan over medium-high heat. Remove the chicken from the marinade and grill for about 6-7 minutes on each side or until fully cooked and the internal temperature reaches 165°F. Once done, remove from the heat and let it rest for a few minutes before slicing it into bite-sized pieces.
  3. Step 3: Prepare the Broccoli - While the chicken is grilling, bring a pot of salted water to a boil. Blanch the broccoli florets for about 2 minutes until bright green and slightly tender. Drain and immediately plunge them into ice water to stop the cooking process. Once cooled, drain again and set aside.
  4. Step 4: Preheat the Oven - Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper to prevent sticking.
  5. Step 5: Roll Out the Puff Pastry - On a lightly floured surface, roll out the puff pastry sheet to fit the size of your baking sheet. Place the rolled pastry onto the prepared baking sheet.
  6. Step 6: Assemble the Pizza - Spread the grilled chicken pieces evenly over the puff pastry. Next, add the blanched broccoli florets on top. Sprinkle the shredded mozzarella or provolone cheese generously over the chicken and broccoli.
  7. Step 7: Egg Wash the Crust - In a small bowl, beat the egg with 1 teaspoon of water. Using a pastry brush, apply the egg wash around the edges of the puff pastry to give it a beautiful golden color as it bakes.
  8. Step 8: Bake the Pizza - Bake the assembled puff pastry pizza in the preheated oven for about 15-20 minutes, or until the pastry is golden brown and the cheese is melted and bubbly.
  9. Step 9: Finish and Serve - Once baked, remove the pizza from the oven and sprinkle with freshly grated Parmesan cheese. Allow it to cool for a few minutes, then slice and serve hot.
