Ingredients
  

  • 19 oz frozen cheese tortellini thawed
  • 1 1/2 cups peas fresh or frozen
  • 2 Tbsp olive oil
  • 1 lb uncooked medium shrimp peeled and deveined
  • 3 garlic cloves minced
  • 1/2 tsp salt
  • 1/2 tsp dried thyme
  • 1/4 tsp pepper

Method
 

  1. Start by bringing a large pot of salted water to a boil. Add the thawed cheese tortellini to the boiling water and cook according to the package instructions, usually about 3-5 minutes. Once cooked, drain the tortellini in a colander and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Once the oil is hot, add the peeled and deveined shrimp to the skillet. Cook the shrimp for about 2-3 minutes on one side until they turn pink, then flip them over.
  3. Once you’ve flipped the shrimp, add the minced garlic, salt, dried thyme, and pepper to the skillet. Sauté for an additional 1-2 minutes, stirring frequently until the garlic is fragrant and the shrimp are fully cooked.
  4. Add the peas to the skillet and stir them in, cooking for another minute. Then, gently fold in the cooked tortellini, ensuring everything is well combined and heated through.
  5. Remove the skillet from the heat and serve your Garlic Shrimp Tortellini warm. You can garnish it with freshly grated Parmesan cheese or a sprinkle of fresh herbs if desired.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Reheat in a skillet over medium heat, adding a splash of water or broth.
