Ingredients
  

  • 1 head cauliflower chopped into small florets
  • 3 ounces low-fat cream cheese (brick style)
  • 2 tablespoons salted butter (1 stick)
  • 1 teaspoon minced garlic (sautéed if not pre-prepared)
  • 1 tablespoon chopped fresh rosemary (optional)

Method
 

  1. Begin by washing the head of cauliflower thoroughly. Chop it into small florets, aiming for uniform pieces so they cook evenly.
  2. In a large pot, bring water to a boil. Once boiling, add the cauliflower florets. Cook for about 8-10 minutes, or until the cauliflower is fork-tender.
  3. Once cooked, drain the cauliflower in a colander and allow it to steam dry for a couple of minutes.
  4. In a small pan, melt the salted butter over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant and golden.
  5. In a blender or food processor, combine the drained cauliflower, sautéed garlic and butter, and cream cheese. Blend until smooth and creamy.
  6. Taste your Garlic Mashed Cauliflower and adjust the seasoning if necessary.
  7. Transfer the Garlic Mashed Cauliflower to a serving dish and serve warm.

Notes

  • For an ultra-smooth texture, blend the mixture in batches if necessary.
  • Experiment with seasonings—try adding a pinch of nutmeg or some grated Parmesan cheese.
  • If the mixture is too thick, add a splash of vegetable broth or milk.
