Ingredients

  • 1 lb fingerling potatoes
  • 3 tablespoons unsalted butter melted
  • 4 cloves garlic minced
  • 1/2 tablespoon garlic powder
  • 1/2 teaspoon salt
  • 1 tablespoon parsley chopped (optional)

Equipment

  • Large mixing bowl
  • Baking sheet
  • Parchment paper
  • Chef’s knife
  • Measuring spoons

Method

  1. Step 1: Preheat your oven to 425°F (220°C). A hot oven is crucial for getting those crispy edges on your fingerling potatoes.
  2. Step 2: Wash the fingerling potatoes thoroughly under cold water to remove any dirt. Cut off any blemishes. Slice them in half lengthwise or leave them whole, depending on your preference.
  3. Step 3: In a large mixing bowl, combine the melted butter, minced garlic, garlic powder, and salt. Stir until well combined.
  4. Step 4: Add the prepared fingerling potatoes to the bowl with the garlic butter mixture. Toss gently until fully coated.
  5. Step 5: Spread the coated potatoes in a single layer on a baking sheet. For easier cleanup, line the sheet with parchment paper. Roast for about 25-30 minutes, until golden brown and fork-tender, tossing halfway through.
  6. Step 6: Remove from the oven, transfer to a serving dish, and sprinkle with chopped parsley if desired. Serve warm and enjoy!

Notes

  • Store leftovers in an airtight container in the fridge for up to 3 days.
  • For longer storage, freeze the roasted potatoes in a single layer, then transfer to a freezer-safe container for up to 2 months.
  • Reheat by warming in the oven at 400°F (200°C) for 10-15 minutes.
