Ingredients
  

  • 2 large eggs
  • 1 1/2 cups milk
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 1/4 cup granulated sugar
  • 2 1/2 cups Krusteaz Pancake Mix
  • Oil for frying Canola or peanut oil

Method
 

  1. In a large mixing bowl, whisk together the eggs, milk, vanilla extract, salt, and granulated sugar until well combined. Slowly add in the Krusteaz Pancake Mix, stirring until the batter is smooth.
  2. In a heavy-bottomed pot or deep fryer, heat about 2 inches of oil over medium-high heat.
  3. Using a funnel, squeeze bottle, or zip-top bag with a corner snipped off, carefully drizzle the batter into the hot oil in a circular motion, creating a spiral shape.
  4. Fry the funnel cake for about 1-2 minutes on each side, or until golden brown. Use a slotted spoon to flip it over halfway through.
  5. Carefully remove the funnel cake from the oil and place it on a plate lined with paper towels to drain excess oil.
  6. Dust your funnel cake with powdered sugar, or add toppings like chocolate syrup, fresh berries, or whipped cream.
