Ingredients
  

  • 1 cup unsalted butter
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla
  • 3 cups flour
  • 1 teaspoon salt
  • 6 ounces cream cheese softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla
  • 2 cups fresh fruits such as strawberries, blueberries, raspberries, mandarins, kiwi, or blackberries

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the unsalted butter and sugar until light and fluffy, about 3-5 minutes.
  3. Beat in the eggs, one at a time, then add the vanilla and mix until combined.
  4. In a separate bowl, whisk together the flour and salt, then gradually add to the wet ingredients and mix until the dough comes together.
  5. Drop dough onto prepared baking sheets, spacing them about 2 inches apart. Flatten each dough ball slightly.
  6. Bake in the preheated oven for 10-12 minutes, until the edges are lightly golden. Let cool on the baking sheets for a few minutes before transferring to a cooling rack.
  7. In a medium bowl, beat together the cream cheese, powdered sugar, and vanilla until smooth and creamy.
  8. Once the cookies are completely cool, frost each cookie with the cream cheese frosting.
  9. Decorate each frosted cookie with your choice of fresh fruits.

Notes

  • Chill the dough for 30 minutes if cookies spread too much during baking.
