Preheat your oven to 350°F (175°C).
Grease your 9x5-inch loaf pan or line it with parchment paper.
In a large mixing bowl, beat together the eggs and sugar until light and fluffy. Add oil, mashed bananas, creme fraiche or sour cream, and vanilla extract. Mix until well combined.
In a separate bowl, whisk together flour, baking soda, salt, and cinnamon.
Gradually add the dry ingredients to the wet mixture, folding gently until just combined.
Pour the batter into the prepared loaf pan and smooth the top.
Bake for about 55-65 minutes or until a toothpick inserted into the center comes out clean.
Let the bread cool in the pan for 10 minutes, then transfer to a cooling rack to cool completely.
