Wash and scrub your Yukon potatoes to remove any dirt. Cut them into wedges, making sure they are relatively uniform in size for even cooking.
In a mixing bowl, toss the potato wedges with olive oil, garlic powder (or grated fresh garlic), kosher salt, Italian seasoning, and black pepper. Ensure all the wedges are well-coated with the seasoning mixture.
Spread the seasoned potato wedges in a single layer on a baking sheet. Make sure they are not overcrowded to allow for proper crisping.
Bake in the preheated oven for about 25-30 minutes, flipping the wedges halfway through. They should be golden brown and crispy on the outside when done.
