Ingredients
  

  • 3 tablespoons olive oil
  • 3 tablespoons all-purpose flour
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/4 teaspoon ground chipotle peppers adjust to taste
  • 1 cup vegetable stock homemade or store-bought
  • 2 tablespoons tomato paste
  • 2 tablespoons lime juice
  • to taste salt and pepper
  • Fresh cilantro optional, chopped

Method
 

  1. In a medium saucepan, heat 3 tablespoons of olive oil over medium heat.
  2. Once the oil is hot, add 3 tablespoons of all-purpose flour. Whisk continuously for about 1-2 minutes.
  3. Next, sprinkle in 1 teaspoon of ground coriander, 1/2 teaspoon of ground cumin, 1 teaspoon of smoked paprika, and 1/4 teaspoon of ground chipotle peppers. Continue whisking for another minute.
  4. Slowly add 1 cup of vegetable stock while whisking to prevent any lumps. Keep stirring until the mixture is smooth and begins to thicken.
  5. Add 2 tablespoons of tomato paste to the sauce. Whisk until fully incorporated.
  6. Add 2 tablespoons of lime juice, and season with salt and pepper to taste. Let the sauce simmer for about 5-10 minutes, stirring occasionally.
  7. If desired, chop some fresh cilantro and sprinkle it over the sauce before serving.

Notes

  • Store leftover sauce in an airtight container in the refrigerator for up to one week.
  • This sauce can be frozen for up to three months; thaw overnight in the refrigerator before using.
  • Adjust the spice level by varying the amount of chipotle peppers used.
