Ingredients
  

  • 1 T butter for toasting the bread
  • 2 pieces bread or low-carb bread
  • 2 large eggs the star of the dish
  • Salt to taste
  • fresh ground black pepper to taste
  • 1/4 cup Mexican Blend cheese adds melty goodness
  • 2 T salsa optional, for serving

Equipment

  • Spatula
  • Cookie cutter or glass
  • Measuring cups and spoons

Method
 

  1. Start by cutting a hole in the center of each slice of bread using a cookie cutter or a drinking glass.
  2. Place your skillet on the stove over medium heat. Add the butter and let it melt, swirling it around to coat the bottom of the skillet.
  3. Once the butter is melted, place the slices of bread in the skillet. Let them toast for about 2-3 minutes until they are golden brown.
  4. Carefully crack an egg into the hole of each slice of bread. Season the eggs with salt and pepper. Allow them to cook for about 2 minutes, or until the whites start to set.
  5. Sprinkle the cheese over the eggs, covering them generously.
  6. Cover the skillet with a lid and let the eggs cook for another 2-3 minutes, or until the cheese is melted and the yolks are cooked to your liking.
  7. Once cooked, carefully remove the Eggs in a Hole (with Cheese) from the skillet using a spatula. Serve them hot with a side of salsa for dipping.
