  • 12 jumbo shrimps, peeled and deveined
  • 1 tsp Old Bay seasoning
  • 2 tbsp butter
  • ½ cup good quality feta cheese crumbles
  • Lemon juice to taste
  • Chopped parsley for garnish
  • Lemon wedges for serving

Method
 

  1. Start by bringing a large pot of salted water to a boil. Once boiling, add the uncooked orzo pasta and cook according to the package instructions, typically around 8-10 minutes, until al dente. Stir occasionally to prevent sticking.
  2. While the orzo is cooking, season the peeled and deveined jumbo shrimp with Old Bay seasoning, ensuring they are evenly coated.
  3. In a skillet over medium heat, melt the butter. Once melted and bubbling, add the seasoned shrimp to the skillet. Cook for about 2-3 minutes on each side, or until they are pink and opaque.
  4. Once the orzo is cooked, drain it in a colander and return it to the pot. Add the sautéed shrimp, along with any remaining butter from the skillet. Gently toss everything together until well combined.
  5. Sprinkle the crumbled feta cheese over the orzo and shrimp mixture. Drizzle fresh lemon juice to taste. Toss gently to combine, allowing the feta to slightly melt into the warm pasta.
  6. Transfer the Easy Orzo with Shrimp and Feta to serving plates. Garnish with chopped parsley for a pop of color and serve with lemon wedges on the side.
