Ingredients
  

  • 1 cup cooked ramen noodles or rice noodles
  • 1 cup chicken broth
  • 2 tablespoons sesame oil
  • 1 carrot, sliced into ½ inch coin-shaped slices
  • ½ chicken breast cut into 1 inch cubes
  • 4 baby bella mushrooms, thinly sliced
  • ½ cup fresh spinach leaves
  • Sesame seeds for garnish
  • Soy sauce to taste

Method
 

  1. Step 1: Prepare the Noodles - Start by cooking your ramen or rice noodles according to the package instructions. Once cooked, drain and set them aside.
  2. Step 2: Sauté the Chicken - In a skillet or wok, heat 1 tablespoon of sesame oil over medium-high heat. Add the cubed chicken breast and sauté until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  3. Step 3: Cook the Vegetables - In the same skillet, add another tablespoon of sesame oil. Toss in the sliced carrots and mushrooms, sautéing for about 3-4 minutes until they begin to soften.
  4. Step 4: Combine Ingredients - Return the sautéed chicken to the skillet, and add the chicken broth. Bring the mixture to a gentle simmer. Allow it to cook for an additional 2-3 minutes to meld the flavors together.
  5. Step 5: Add the Spinach and Noodles - Stir in the fresh spinach leaves and cooked noodles, mixing everything well. Let it heat through for another minute or two.
  6. Step 6: Season and Serve - Taste your Easy Noodle Bowl and add soy sauce to your liking. Once everything is heated through, serve the noodle bowl in individual plates or bowls, garnishing with sesame seeds.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • When reheating, add a splash of water or broth to prevent the noodles from drying out.
