Ingredients
  

  • 12 ounces cashew butter
  • 1/2 cup unsalted butter or ghee or coconut oil
  • 1/2 cup raw cacao powder
  • 1/2 cup sugar-free confectioners sugar
  • 1 tsp pure vanilla extract
  • 1/2 tsp sea salt

Method
 

  1. In a microwave-safe bowl, combine the unsalted butter (or your choice of ghee or coconut oil) with the cashew butter. Heat in the microwave in 30-second intervals, stirring in between, until melted and smooth. This should take about 1-2 minutes.
  2. Once your butter and cashew butter mixture is smooth, add in the raw cacao powder, sugar-free confectioners sugar, pure vanilla extract, and sea salt. Stir until fully combined and the mixture is creamy.
  3. Pour the fudge mixture into the lined baking dish, using your spatula to spread it evenly. Make sure the top is smooth for an attractive finish.
  4. Place the baking dish in the refrigerator and allow the fudge to set for at least 2 hours. This step is crucial for achieving the perfect fudge texture.
  5. Once set, remove the fudge from the dish using the parchment paper. Cut into squares and enjoy! Store any leftovers in an airtight container in the refrigerator.

  • Make sure your ingredients are at room temperature for easier mixing.
  • Don’t rush the melting process; ensure the butter and nut butter are completely smooth.
