Start by heating the olive oil in a large skillet over medium heat. Add the diced onion and sauté for about 3-4 minutes, or until the onions become translucent and fragrant.
Add the ground beef to the skillet with the sautéed onions. Cook until the beef is browned and fully cooked, breaking it apart with your spatula as it cooks.
Once the beef is cooked, sprinkle in the taco seasoning and pour in the hot water. Stir well to combine and allow the mixture to simmer for about 5 minutes, letting the flavors meld together.
Preheat your oven to 350°F (175°C). On a baking sheet, arrange a layer of tortilla chips. Spoon a generous amount of the seasoned beef mixture over the chips, followed by black beans and a mix of the grated cheddar and Monterey Jack cheeses.
Place the baking sheet in the preheated oven and bake for 10-12 minutes, or until the cheese is melted and bubbly. Keep an eye on them to prevent burning!
Once out of the oven, it’s time to build your nacho masterpiece. Top the nachos with diced Roma tomatoes, sour cream or Mexican crema, diced red onions, chopped cilantro, sliced jalapeños, sliced black olives, and cubed avocado.
