- Step 1: Roast the Garlic - Preheat your oven to 400°F (200°C). Cut the top off the garlic head to expose the cloves, drizzle with a little olive oil, and wrap it in aluminum foil. Roast in the oven for about 30-35 minutes, or until the cloves are soft and golden.
- Step 2: Prepare the Chickpeas - Open the can of chickpeas and drain them. Rinse the chickpeas under cold water and set them aside. For an extra creamy hummus, you can peel the skins off the chickpeas, but this is optional.
- Step 3: Blend the Ingredients - In a food processor, combine the chickpeas, roasted garlic cloves (squeezed out of their skins), tahini, fresh lemon juice, Kosher salt, and olive oil. Blend on high until smooth. If the mixture is too thick, you can add a tablespoon or two of water until you reach your desired consistency.
- Step 4: Taste and Adjust - Taste the hummus and adjust the seasoning as needed. You might want to add more lemon juice for acidity, salt for flavor, or even a pinch of cumin for warmth.
- Step 5: Serve and Garnish - Transfer the hummus to a serving bowl. Drizzle with a little extra-virgin olive oil and sprinkle black pepper on top. Serve with an assortment of cut vegetables and baked pita chips for dipping.
Notes
- Hummus is best enjoyed fresh but can be stored in an airtight container in the refrigerator for up to one week.
- For a creamier texture, blend in a little water if the hummus is too thick.
- Experiment with flavors by adding spices like cumin or fresh herbs like parsley.
