Ingredients
  

  • 1 pound Ground beef
  • 1 clove Garlic (minced)
  • 1 cup Tomato sauce
  • 1 cup Chicken broth
  • 2 tablespoons Taco seasoning
  • 8 medium Corn tortillas (or flour tortillas)
  • 1 cup Mexican cheese blend (shredded)
  • 1 Avocado (chopped)
  • Pico de gallo
  • Romaine lettuce (or iceberg, shredded)

Method
 

  1. In a large skillet over medium heat, add the ground beef. Use a spatula to break it up as it cooks for about 5-7 minutes until browned.
  2. Add the minced garlic to the skillet and sauté for about 1 minute until fragrant.
  3. Pour in the tomato sauce and chicken broth, stir to combine, and let simmer for about 5 minutes.
  4. Add taco seasoning, stirring well, and let simmer for an additional 2-3 minutes.
  5. Heat the tortillas in a separate skillet over medium heat for about 30 seconds on each side.
  6. Assemble the tacos by spooning the beef mixture onto each tortilla and topping with cheese, avocado, pico de gallo, and lettuce.
  7. Serve immediately on a platter and enjoy!

Notes

  • Feel free to use ground turkey or chicken for a leaner option.
  • For a vegetarian alternative, substitute beef with lentils or black beans.
