Method
 

Steps to Prepare:
  1. In a mixing bowl, combine the olive oil, minced garlic, Kosher salt, black pepper, dried oregano, crushed red pepper, dried thyme, lemon juice, and lemon zest. Whisk everything together until well blended.
  2. Add the chicken thighs to the bowl and coat them thoroughly with the marinade. Cover and refrigerate for at least 30 minutes, or up to 2 hours.
  3. Preheat your oven to 400°F (200°C).
  4. After marinating, place the chicken thighs in an oven-safe skillet or baking dish. Squeeze additional lemon juice over the top and arrange lemon wedges around the chicken.
  5. Bake the chicken for 35-45 minutes, or until the internal temperature reaches 165°F (75°C).
  6. Let it rest for a few minutes before serving. Serve with roasted vegetables or a fresh Greek salad.
