- In a large mixing bowl, combine the 3 cups of plain flour, baking powder, salt, and garlic powder (if using). Whisk together until well mixed.
- In a separate bowl, combine the plain Greek yogurt, vegetable oil, and 1/4 cup of milk. Stir until smooth.
- Add the wet ingredients to the dry ingredients. Stir with a wooden spoon until a rough dough forms.
- Turn the dough out onto a lightly floured surface. Knead it gently for about 1-2 minutes, just until it comes together. If the dough is too sticky, sprinkle a little more flour as needed.
- Divide the dough into 8 equal pieces. Roll each piece into a ball.
- Using a rolling pin, roll each ball into a flat circle, about 1/4 inch thick. Dust with flour as needed to prevent sticking.
- Heat a non-stick skillet over medium-high heat. Add a drizzle of oil. Place one flatbread in the skillet and cook for 1-2 minutes on each side, until golden brown and cooked through. Repeat with the remaining dough, adding more oil to the pan as needed.
- As you cook each flatbread, you can keep them warm by wrapping them in a clean kitchen towel.
