Ingredients
  

  • 2 pounds powdered sugar (907g)
  • 1 cup unsweetened cocoa powder (50g)
  • 2 teaspoons salt
  • 8 ounces block American cheese (227g)
  • 1 cup unsalted butter (227g), sliced
  • 1 teaspoon vanilla extract
  • 1 cup chopped nuts optional

Equipment

  • Medium saucepan
  • Wooden spoon or spatula
  • 9x13 inch baking pan
  • Parchment paper
  • Measuring cups and spoons

Method
 

  1. Start by lining your 9x13 inch baking pan with parchment paper. This will make it easier to lift the fudge out once it’s set. Leave some overhang on the sides for easy removal.
  2. In a medium saucepan, combine the sliced unsalted butter and American cheese. Heat over medium-low heat, stirring continuously until both are melted and the mixture is smooth.
  3. Once the butter and cheese are completely melted, remove the saucepan from the heat. Gradually add the cocoa powder and powdered sugar, mixing well until fully incorporated. The mixture will be thick, so be patient!
  4. Stir in the salt and vanilla extract. If you’re using chopped nuts, fold them into the mixture at this point. The nuts will add a wonderful texture and flavor to your fudge.
  5. Pour the fudge mixture into the prepared baking pan, spreading it evenly. Use a spatula to smooth the top as needed. Let the fudge cool at room temperature for about 2 hours, or until it’s set.
  6. Once the fudge is firm, lift it out of the pan using the parchment paper overhang. Place it on a cutting board and cut it into squares. Enjoy your delicious homemade fudge!

Notes

  • For nut-free fudge, omit nuts or use seeds.
  • Try using vegan butter and cheese for a plant-based version.
  • Store in an airtight container at room temperature for up to one week.
