  • 2 boxes Jiffy cornbread mix 8-oz each
  • 2 cups shredded cheddar cheese
  • 2 cups chopped fresh broccoli florets
  • 1 cup cottage cheese
  • 1 cup milk

Method
 

  1. Preheat your oven to 400°F (200°C) to ensure even baking.
  2. Lightly grease your 9x13 inch baking dish with cooking spray or butter to prevent sticking.
  3. In a large mixing bowl, combine the two boxes of Jiffy cornbread mix and set aside.
  4. In another bowl, whisk together the beaten eggs, cottage cheese, and milk until well blended.
  5. Pour the wet mixture into the dry ingredients and gently fold them together. Be careful not to overmix; a few lumps are okay.
  6. Fold in the chopped broccoli florets and shredded cheddar cheese until evenly distributed throughout the batter.
  7. Pour the mixture into the prepared baking dish and spread it out evenly. Bake for 25-30 minutes or until the top is golden brown and a toothpick inserted in the center comes out clean.
  8. Let the cornbread cool for a few minutes before slicing. Serve warm for the best flavor and texture.
