Ingredients
  

  • 1 lb ground beef
  • 1 oz taco seasoning 1 package
  • 1 cup water
  • 1 cup chunky salsa
  • 1 15 oz can black beans rinsed and drained
  • 4 6 inch soft flour tortillas sliced into 1-inch strips
  • 1 cup shredded Mexican blend cheese
  • 1/2 cup sour cream
  • 1/4 cup sliced green onions

Method
 

  1. In a large skillet over medium heat, add the ground beef. Use a spatula to break it apart as it cooks, browning it evenly until there are no pink spots remaining. This should take about 5-7 minutes.
  2. Once the beef is cooked, drain any excess grease. Then, sprinkle the taco seasoning over the beef, stirring to coat it evenly. Pour in the cup of water, stirring to combine. Let this simmer for about 2 minutes.
  3. Stir in the chunky salsa and rinsed black beans. Mix everything well and allow it to heat through for another 3-4 minutes.
  4. Next, add the sliced flour tortillas to the skillet. Gently fold them into the mixture, ensuring they’re covered with the beef and salsa sauce.
  5. Sprinkle the shredded Mexican blend cheese over the top of your skillet mixture. Reduce the heat to low, cover the skillet, and let it cook for about 3-5 minutes, or until the cheese is melted and bubbly.
  6. Once the cheese has melted, remove the skillet from the heat. Serve the Easy Beef Burrito Skillet hot, topped with sour cream and sliced green onions.

Notes

  • For a vegetarian option, swap out the ground beef for lentils or chickpeas.
  • Use corn tortillas to make it gluten-free.
