Easy Banana Cake with Cream Cheese Frosting

Ingredients
  

For the Cake:
  • 3 medium Bananas ripe, mashed
  • 8 tablespoons Butter softened
  • ½ cup Brown Sugar
  • ½ cup Granulated Sugar
  • 1 teaspoon Vanilla Extract
  • 2 large Eggs room temperature
  • 1 ½ cups All-purpose Flour
  • 1 teaspoon Baking Soda
  • ½ teaspoon Baking Powder
  • ½ teaspoon Kosher Salt
  • ½ cup Chopped Nuts optional
For the Frosting:
  • 8 tablespoons Butter softened
  • 8 oz Cream Cheese room temperature
  • 1 teaspoon Maple Extract
  • 2 cups Powdered Sugar

Method
 

Directions:
  1. Preheat your oven to 350°F (175°C). Grease your 9x13 inch baking pan with butter or non-stick spray to prevent sticking.
  2. In a mixing bowl, mash 3 ripe bananas with a fork until smooth. Set aside.
  3. In another large mixing bowl, cream together 8 tablespoons of softened butter, ½ cup of brown sugar, and ½ cup of granulated sugar using an electric mixer until light and fluffy.
  4. Add in 1 teaspoon of vanilla extract and 2 room temperature eggs. Mix well until fully incorporated.
  5. In a separate bowl, whisk together 1 ½ cups of all-purpose flour, 1 teaspoon of baking soda, ½ teaspoon of baking powder, and ½ teaspoon of kosher salt. Gradually add the dry ingredients to the wet mixture, alternating with the mashed bananas. Mix until just combined. If using, fold in ½ cup of chopped nuts.
  6. Pour the batter into the prepared baking pan and spread it evenly. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool completely in the pan on a cooling rack.
  7. In a mixing bowl, beat together 8 tablespoons of softened butter, 8 oz of cream cheese, and 1 teaspoon of maple extract until smooth and creamy. Gradually add in 2 cups of powdered sugar, mixing until well combined and fluffy.
  8. Once the cake is completely cooled, spread the cream cheese frosting evenly over the top. If desired, sprinkle with additional chopped nuts for decoration.

Notes

  • Feel free to experiment with flavor additions, such as cinnamon or chocolate chips, for a unique twist.
  • Don’t skip the cooling step! Frosting a warm cake can lead to a melty mess.
  • For an extra touch, consider topping the cake with fresh banana slices right before serving.
