Directions:
- Preheat your oven to 350°F (175°C). Grease your 9x13 inch baking pan with butter or non-stick spray to prevent sticking.
- In a mixing bowl, mash 3 ripe bananas with a fork until smooth. Set aside.
- In another large mixing bowl, cream together 8 tablespoons of softened butter, ½ cup of brown sugar, and ½ cup of granulated sugar using an electric mixer until light and fluffy.
- Add in 1 teaspoon of vanilla extract and 2 room temperature eggs. Mix well until fully incorporated.
- In a separate bowl, whisk together 1 ½ cups of all-purpose flour, 1 teaspoon of baking soda, ½ teaspoon of baking powder, and ½ teaspoon of kosher salt. Gradually add the dry ingredients to the wet mixture, alternating with the mashed bananas. Mix until just combined. If using, fold in ½ cup of chopped nuts.
- Pour the batter into the prepared baking pan and spread it evenly. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool completely in the pan on a cooling rack.
- In a mixing bowl, beat together 8 tablespoons of softened butter, 8 oz of cream cheese, and 1 teaspoon of maple extract until smooth and creamy. Gradually add in 2 cups of powdered sugar, mixing until well combined and fluffy.
- Once the cake is completely cooled, spread the cream cheese frosting evenly over the top. If desired, sprinkle with additional chopped nuts for decoration.
Notes
- Feel free to experiment with flavor additions, such as cinnamon or chocolate chips, for a unique twist.
- Don’t skip the cooling step! Frosting a warm cake can lead to a melty mess.
- For an extra touch, consider topping the cake with fresh banana slices right before serving.
