Ingredients

  • 1 1/4 cups all-purpose flour
  • 1/2 cup dark or Dutch-processed cocoa powder sifted
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 large ripe bananas mashed
  • 2 large eggs
  • 1/2 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup unsalted butter melted and slightly cooled
  • 1/2 cup chocolate chips
  • 2 tablespoons cacao nibs for topping (optional)

Equipment

  • Mixing bowls
  • Whisk
  • Rubber spatula
  • Loaf pan
  • Measuring cups and spoons

Method

  1. Preheat your oven to 350°F (175°C).
  2. Grease your loaf pan lightly with butter or non-stick spray.
  3. In a large mixing bowl, whisk together the all-purpose flour, cocoa powder, baking powder, baking soda, and salt until well combined.
  4. In another bowl, mash the ripe bananas until smooth, then add the eggs, granulated sugar, brown sugar, and vanilla extract. Mix until well blended, then whisk in the melted butter.
  5. Pour the wet ingredients into the bowl with the dry ingredients and gently fold together until just combined.
  6. Fold in the chocolate chips until evenly distributed.
  7. Transfer the batter into the prepared loaf pan and sprinkle cacao nibs on top if desired.
  8. Bake for 55 to 65 minutes, or until a toothpick inserted into the center comes out clean with a few moist crumbs.
  9. Let the bread cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

  • Use very ripe bananas for the best flavor and sweetness.
  • Don’t overmix the batter; it should be just combined to keep the bread tender.
  • Let the bread cool completely before slicing for cleaner cuts.
