Ingredients
  

  • 1 pound lean ground beef
  • 2 tablespoons taco seasoning mix
  • 1/2 cup water
  • 4 cups chopped romaine lettuce
  • 1 medium tomato diced
  • 3/4 cup shredded cheddar cheese
  • 1 1/2 cups slightly crushed nacho cheese-flavored tortilla chips (like Doritos)
  • 1/2 cup light salad dressing (your choice)

Method
 

  1. In a large skillet, cook the 1 pound of lean ground beef over medium heat. Use a wooden spoon to break it apart while it cooks. Continue to sauté until it’s browned and fully cooked, which should take about 5-7 minutes.
  2. Once the beef is cooked, add 2 tablespoons of taco seasoning mix to the skillet along with 1/2 cup of water. Stir well to combine. Let it simmer for about 5 minutes, or until the mixture thickens slightly. Remove from heat and set aside.
  3. While the beef is simmering, chop 4 cups of romaine lettuce and place it in a large mixing bowl. Add the diced tomato for a fresh burst of flavor.
  4. To the bowl of lettuce and tomato, add the cooked ground beef mixture, 3/4 cup of shredded cheddar cheese, and 1 1/2 cups of slightly crushed Doritos. Toss everything together gently to combine.
  5. Drizzle 1/2 cup of your favorite light salad dressing over the salad. Toss again to ensure everything is coated evenly.
  6. Once everything is combined, transfer the Doritos Taco Salad to a large serving bowl. Enjoy it fresh and crunchy!

Notes

  • This salad is best served fresh, but leftovers can be stored in an airtight container for up to 2 days.
  • Keep the Doritos separate to maintain their crunch.
