Ingredients
  

For the Parfait:
  • 1 cup Strawberries hulled and halved
  • 1 cup Pineapple cut into bite-sized pieces
  • 1 cup Blackberries rinsed
  • 8 oz Cream Cheese softened
  • 4 tbsp Butter or Margarine
  • 1 cup Powdered Sugar
  • 1 cup Cool Whip
  • 1 pkg Instant White Chocolate or Vanilla Pudding
  • 2 cups Milk whole or preferred milk
  • 1 tsp Vanilla Extract

Method
 

Instructions:
  1. Start by hulled and halving the strawberries, cutting the pineapple into bite-sized pieces, and rinsing the blackberries. Set these aside.
  2. In a large mixing bowl, combine the softened cream cheese and butter (or margarine). Beat together until smooth and creamy. Gradually add in the powdered sugar, mixing until well incorporated.
  3. Gently fold in the Cool Whip into the cream mixture until fully combined. This will create a light and fluffy cream layer.
  4. In another bowl, whisk together the instant pudding mix with milk and vanilla extract. Stir until it thickens, usually about 2 minutes.
  5. In your parfait glasses or cups, start by adding a layer of the cream mixture at the bottom. Follow this with a layer of strawberries, then a layer of pineapple, and finally a layer of blackberries. Repeat the layers until the glasses are filled, finishing with a dollop of cream on top and a few berries for garnish.
  6. Refrigerate the parfaits for at least 30 minutes before serving. This allows the flavors to meld together beautifully. Serve chilled and enjoy the delightful layers of flavor!

Notes

  • For an extra touch, drizzle some chocolate syrup or honey over the top before serving.
  • Make the cream mixture ahead of time and store it in the fridge to save time.
