  • 2 ounces dark chocolate melted for a decadent finish.

Method
 

Preparation Steps:
  1. Start by measuring out all your ingredients. Make sure your dates are pitted; if they're not soft, soak them in warm water for about 10 minutes to soften.
  2. In your food processor, add the pecans. Pulse them a few times until they are finely chopped but not pureed. You want some texture, so be careful not to over-process.
  3. Next, add the pitted dates to the food processor with the chopped pecans. Process until the mixture starts to clump together.
  4. Add the flaked coconut, coconut oil, vanilla extract, ground cinnamon, and a pinch of kosher salt to the mixture. Process until everything is combined and the mixture is sticky.
  5. Using your hands, scoop out small portions of the mixture and roll them into bite-sized balls. Place them on a parchment-lined baking sheet.
  6. Melt the dark chocolate in a microwave or double boiler until smooth. Drizzle the melted chocolate over the bites or dip them in chocolate for an extra indulgent treat.
  7. Refrigerate the bites for about 30 minutes to firm up. Once set, they are ready to be enjoyed!

Notes

  • These bites can be stored in an airtight container in the refrigerator for up to one week.
  • They freeze well! Place them in a single layer on a baking sheet, freeze until solid, then transfer to a zip-top freezer bag.
  • If the mixture is too crumbly, add more coconut oil or dates to help it stick together.
