Preparation Steps:
- Start by measuring out all your ingredients. Make sure your dates are pitted; if they're not soft, soak them in warm water for about 10 minutes to soften.
- In your food processor, add the pecans. Pulse them a few times until they are finely chopped but not pureed. You want some texture, so be careful not to over-process.
- Next, add the pitted dates to the food processor with the chopped pecans. Process until the mixture starts to clump together.
- Add the flaked coconut, coconut oil, vanilla extract, ground cinnamon, and a pinch of kosher salt to the mixture. Process until everything is combined and the mixture is sticky.
- Using your hands, scoop out small portions of the mixture and roll them into bite-sized balls. Place them on a parchment-lined baking sheet.
- Melt the dark chocolate in a microwave or double boiler until smooth. Drizzle the melted chocolate over the bites or dip them in chocolate for an extra indulgent treat.
- Refrigerate the bites for about 30 minutes to firm up. Once set, they are ready to be enjoyed!
Notes
- These bites can be stored in an airtight container in the refrigerator for up to one week.
- They freeze well! Place them in a single layer on a baking sheet, freeze until solid, then transfer to a zip-top freezer bag.
- If the mixture is too crumbly, add more coconut oil or dates to help it stick together.
