Ingredients
  

For the Quiche:
  • 1 package ground sausage 8 ounces
  • 1 teaspoon olive oil
  • 2 medium red onions diced
  • 1 package frozen chopped spinach 10 ounces, thawed and well drained
  • 6 large eggs
  • 2 cups shredded mozzarella cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/2 cup sun-dried tomatoes chopped

Method
 

Instructions:
  1. Preheat your oven to 375°F (190°C). This ensures that your quiche cooks evenly.
  2. In a skillet, heat the olive oil over medium heat. Add the ground sausage and cook until browned, breaking it up with a spatula as it cooks, about 5-7 minutes. Remove from heat and set aside.
  3. In the same skillet, add the diced red onions. Sauté until translucent and slightly caramelized, about 5 minutes.
  4. In a large mixing bowl, whisk together the eggs, salt, and ground black pepper. Add the cooked sausage, sautéed onions, thawed spinach, sun-dried tomatoes, and shredded mozzarella cheese. Stir until well combined.
  5. Pour the mixture into a greased 9-inch pie dish or baking dish. Spread it evenly with a spatula.
  6. Place the dish in the preheated oven and bake for 35-40 minutes, or until the quiche is set and lightly golden on top.
  7. Once baked, remove the quiche from the oven and let it cool for about 10 minutes before slicing.
