  • 1 1/2 tablespoons crushed walnuts plus more for garnishing
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper

Method
 

  1. Start by preheating your oven to 375°F (190°C). This will ensure that your crostini turns out perfectly crispy.
  2. Take your whole-wheat baguette and slice it into 1/2-inch thick slices. Aim for even thickness to ensure uniform toasting.
  3. Arrange the baguette slices on a baking sheet in a single layer. Place them in the oven and toast for about 10 minutes, flipping halfway through, until they are golden brown and crispy.
  4. While the baguette is toasting, grab a mixing bowl. Add the part-skim ricotta cheese and low-fat cream cheese (or neufchâtel cream cheese) to the bowl. Use a spatula to mix them together until smooth and creamy.
  5. Chop the fresh basil or mint leaves and add them to the cheese mixture. Then sprinkle in the crushed walnuts, salt, and pepper. Mix until everything is well combined.
  6. Once the baguette slices are toasted, remove them from the oven and let them cool slightly. Spread a generous amount of the creamy cheese mixture onto each slice.
