Ingredients
  

  • 1/2 cup coconut oil melted, plus more for greasing
  • 1 cup coconut sugar
  • 1 large egg white
  • 1 teaspoon vanilla extract
  • 1 cup finely-ground almond meal (about 5.4 ounces)
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup dark chocolate chips (dairy-free and no refined sugars)

Method
 

  1. Start by greasing the inner pot of your Crock-Pot with a little coconut oil.
  2. In a mixing bowl, combine the melted coconut oil, coconut sugar, egg white, and vanilla extract. Whisk together until smooth.
  3. Add the finely-ground almond meal, baking powder, and salt to the wet mixture. Stir until well combined.
  4. Gently fold in the dark chocolate chips until evenly distributed.
  5. Spoon the cookie dough into the greased Crock-Pot and spread it evenly across the bottom.
  6. Cover the Crock-Pot and set it on low heat. Cook for about 2 to 2.5 hours.
  7. Once done, let the cookies cool slightly before serving.

Notes

  • Store cookies in an airtight container at room temperature for up to 5 days.
  • For longer storage, refrigerate for up to a week or freeze for up to 3 months.
  • Reheat in the microwave for a few seconds before serving for a warm treat!
