Start by greasing the inner pot of your Crock-Pot with a little coconut oil.
In a mixing bowl, combine the melted coconut oil, coconut sugar, egg white, and vanilla extract. Whisk together until smooth.
Add the finely-ground almond meal, baking powder, and salt to the wet mixture. Stir until well combined.
Gently fold in the dark chocolate chips until evenly distributed.
Spoon the cookie dough into the greased Crock-Pot and spread it evenly across the bottom.
Cover the Crock-Pot and set it on low heat. Cook for about 2 to 2.5 hours.
Once done, let the cookies cool slightly before serving.
