Ingredients
  

  • 2 cups cooked quinoa (follow cooking directions on the package)
  • 1.5 cups kale (coarsely chopped, center stalk removed)
  • 0.5 cup sweet onion (diced)
  • 0.5 teaspoon kosher or sea salt
  • 1 teaspoon chili powder
  • 0.5 teaspoon black pepper
  • 0.5 cup low-fat feta cheese (crumbled)
  • 1 cup panko breadcrumbs (whole grain if available)
  • 2 large eggs (beaten)
  • 1 tablespoon extra virgin olive oil

Method
 

  1. Step 1: Cook the Quinoa - Begin by cooking 2 cups of quinoa according to package directions. Once cooked, allow it to cool slightly.
  2. Step 2: Prepare the Vegetables - While the quinoa is cooling, wash and chop the kale, removing the center stalk, and finely dice the sweet onion.
  3. Step 3: Combine Ingredients - In a large mixing bowl, combine the cooked quinoa, chopped kale, diced onion, salt, chili powder, black pepper, and feta cheese. Mix well until all ingredients are evenly distributed.
  4. Step 4: Add Binders - Add the beaten eggs and panko breadcrumbs to the mixture. Stir until everything is well combined and holds together. If the mixture feels too wet, add a bit more panko until it reaches the desired consistency.
  5. Step 5: Form the Fritters - Using your hands, form the mixture into small patties or fritters, about 2-3 inches in diameter.
  6. Step 6: Cook the Fritters - Heat the extra virgin olive oil in a non-stick skillet over medium heat. Once hot, carefully add the fritters, cooking in batches if necessary. Fry for about 4-5 minutes on each side, or until golden brown and crispy.
  7. Step 7: Drain and Serve - Once cooked, transfer the fritters to a paper towel-lined plate to drain excess oil. Serve warm, and enjoy your delicious Crispy Quinoa & Kale Fritters!

Notes

  • Feel free to use spinach instead of kale for a milder flavor.
  • Add grated carrots for a hint of sweetness and extra color.
