  • 4 slices thick bread brioche or challah recommended
  • 2 tablespoons butter for frying
  • 3 whole eggs
  • 1/4 cup milk any type
  • 1 teaspoon vanilla extract
  • 1/2 tablespoon cinnamon
  • 1 pinch salt
  • 1/4 cup sugar
  • 1 cup corn flake crumbs
  • 1/4 cup peanut butter melted
  • 2 tablespoons chocolate chips melted

Method
 

Instructions
  1. In a mixing bowl, whisk together the eggs, milk, vanilla extract, cinnamon, sugar, and a pinch of salt until well combined.
  2. In another bowl, pour the corn flake crumbs for coating.
  3. Take a slice of thick bread and dip it into the egg mixture, soaking each side briefly.
  4. Coat the soaked bread slice in the corn flake crumbs, pressing firmly to adhere.
  5. In a frying pan over medium heat, melt 1 tablespoon of butter. Cook the coated bread slices for about 3-4 minutes on each side until golden brown and crispy.
  6. While the French toast cooks, melt the chocolate chips and peanut butter in a microwave-safe bowl, stirring until smooth.
  7. Once cooked, serve the crispy French toast warm, drizzling the melted chocolate and peanut butter over the top.

Notes

  • For a dairy-free option, use almond or oat milk.
  • Reduce soaking time if bread becomes too soggy.
