For the Wings:
  • 3 lbs chicken wings (wings and drummettes split, wingtips removed)
  • 1 tbsp baking powder (aluminum-free)
  • 1 tsp fine sea salt
  • 2 tsp garlic powder
  • 1/4 cup unsalted butter (melted)
  • 1/4 cup Frank’s Original Red Hot Sauce
  • 1 tbsp granulated sugar or brown sugar

Equipment

  • Large mixing bowl
  • Baking sheet
  • Wire rack
  • Measuring cups and spoons
  • Brush

Method

Directions:
  1. Step 1: Prepare the Wings - Preheat your oven to 425°F (220°C). Rinse the chicken wings under cold water and pat them dry using paper towels.
  2. Step 2: Season the Wings - In a large mixing bowl, combine the baking powder, fine sea salt, and garlic powder. Toss the chicken wings in this mixture until they are evenly coated.
  3. Step 3: Arrange for Baking - Line a baking sheet with aluminum foil and place a wire rack on top. Arrange the seasoned wings in a single layer on the wire rack.
  4. Step 4: Bake the Wings - Bake the wings for 40-45 minutes, flipping them halfway through, until golden brown and crispy.
  5. Step 5: Prepare the Buffalo Sauce - In a small bowl, mix together the melted butter, Frank’s Original Red Hot Sauce, and granulated sugar until well combined.
  6. Step 6: Coat the Wings - Once the wings are cooked, place them in a large bowl and pour the buffalo sauce over them. Toss gently to coat.
  7. Step 7: Serve and Enjoy! - Transfer the coated wings to a serving platter and enjoy immediately with your favorite dipping sauces.

Notes

  • Ensure wings are thoroughly dried for maximum crispiness.
  • Use aluminum-free baking powder for the best results.
  • Do not overcrowd the baking sheet to avoid steaming.
  • Flipping the wings halfway through cooking helps them crisp evenly.
