  • 12 4-inch corn tortillas (warmed)
  • 1 cup freshly grated sharp cheddar cheese

  • 1 pint cherry tomatoes (quartered)
  • 1 sweet onion (diced)
  • 0.5 cup cilantro (chopped)
  • 1 Juice of 1 lime

Cooking Instructions
  1. Step 1: Preheat the Oven. Begin by preheating your oven to 400°F (200°C). This will ensure that your tacos are crispy and golden when they come out.
  2. Step 2: Prepare the Chicken Mixture. In a large mixing bowl, combine the cooked, shredded chicken with the sour cream, salsa, ground cumin, smoked paprika, garlic powder, and a generous pinch of kosher salt and pepper. Mix until everything is well incorporated.
  3. Step 3: Assemble the Tacos. Take your warmed corn tortillas and fill each one with the chicken mixture. Place them seam-side down on a baking sheet.
  4. Step 4: Add Cheese. Sprinkle the freshly grated sharp cheddar cheese generously over the top of each taco.
