Ingredients
  

For the Chicken:
  • 2 tablespoons olive oil divided
  • 4 pieces chicken breasts (about 2 pounds)
  • 1 cup diced onion (about 1 small onion)
  • 2 teaspoons minced garlic
  • 1 can tomato sauce (15-ounce)
  • 1 cup heavy whipping cream
  • 1 cup grated parmesan cheese
  • 1 teaspoon Italian seasoning
  • to taste Salt and ground black pepper
  • 1 cup shredded parmesan cheese for topping

Method
 

Cooking Instructions:
  1. Season the chicken breasts with salt and pepper on both sides. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Cook the chicken for about 5-7 minutes on each side, or until golden brown and cooked through. Remove from skillet and set aside.
  2. Add the remaining tablespoon of olive oil to the skillet. Sauté the diced onion for 3-4 minutes until translucent. Add minced garlic and cook for 1-2 more minutes.
  3. Pour in the tomato sauce, stir to combine, and let it simmer on medium-low heat for 5 minutes.
  4. Stir in heavy cream and grated parmesan cheese along with Italian seasoning. Mix until cheese melts and sauce is creamy. Adjust seasoning if necessary.
  5. Return the chicken to the skillet, spooning sauce over it. Simmer for 5 minutes to allow flavors to meld.
  6. Sprinkle shredded parmesan on top and cover. Cook for an additional 2-3 minutes until cheese is melted and bubbly. Garnish with Italian seasoning.

Notes

  • For a dairy-free option, substitute coconut cream and nutritional yeast.
  • Ensure chicken is cooked to an internal temperature of 165°F to avoid dryness.
  • If the sauce is too thick, add a splash of chicken broth or water to reach desired consistency.
