Cooking Instructions:
- Season the chicken breasts with salt and pepper on both sides. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Cook the chicken for about 5-7 minutes on each side, or until golden brown and cooked through. Remove from skillet and set aside.
- Add the remaining tablespoon of olive oil to the skillet. Sauté the diced onion for 3-4 minutes until translucent. Add minced garlic and cook for 1-2 more minutes.
- Pour in the tomato sauce, stir to combine, and let it simmer on medium-low heat for 5 minutes.
- Stir in heavy cream and grated parmesan cheese along with Italian seasoning. Mix until cheese melts and sauce is creamy. Adjust seasoning if necessary.
- Return the chicken to the skillet, spooning sauce over it. Simmer for 5 minutes to allow flavors to meld.
- Sprinkle shredded parmesan on top and cover. Cook for an additional 2-3 minutes until cheese is melted and bubbly. Garnish with Italian seasoning.
