  • 1 cup plain low-fat Greek yogurt
  • 2 tablespoons extra-virgin olive oil
  • 1/2 cup balsamic vinegar
  • 2 tablespoons lemon juice
  • 1 tablespoon honey or maple syrup
  • 1 clove garlic, minced
  • 1 1/2 teaspoons Dijon mustard

Method
 

  1. Start by gathering all the ingredients listed above.
  2. In a mixing bowl, add 1 cup of plain low-fat Greek yogurt, 2 tablespoons of extra-virgin olive oil, and 1/2 cup of balsamic vinegar.
  3. Next, add 2 tablespoons of lemon juice, 1 tablespoon of honey or maple syrup, 1 clove of minced garlic, and 1 1/2 teaspoons of Dijon mustard to the bowl.
  4. Sprinkle in salt and black pepper to taste, adjusting as needed.
  5. Using a whisk or fork, mix all the ingredients together until the dressing is creamy and well combined.
  6. Transfer the dressing to a storage container and let it chill in the refrigerator for at least 30 minutes before serving.

Notes

  • For a vegan option, replace honey with maple syrup.
  • Add fresh herbs or fruits for seasonal variations.
  • Store in an airtight container in the fridge for up to one week.
