  • 1/2 lemon juiced
  • 1/2 cup milk or plain almond milk
  • 3/4 cup Mediterranean Gouda or Gouda cheese finely shredded or grated
  • 1/4 cup fresh basil chopped, plus more for garnish
  • 1/2 cup toasted pine nuts

  1. Start by bringing a large pot of salted water to a boil. Add the fettuccine pasta and cook according to package instructions until al dente. Once cooked, reserve about 1 cup of the pasta water and then drain the pasta. Set it aside.
  2. In a blender or food processor, combine the ripe avocados, garlic clove, lemon juice, and milk (or almond milk). Blend until smooth and creamy, scraping down the sides as necessary. If the sauce is too thick, add a little more milk until you reach the desired consistency.
  3. With the blender still running, gradually add the finely shredded Gouda cheese to the avocado mixture. Blend until the cheese is fully incorporated, and the sauce is creamy and smooth. Season with salt and pepper to taste.
  4. In a large mixing bowl, combine the drained fettuccine with the creamy avocado and Gouda sauce. If the mixture seems too thick, add some reserved pasta water, a little at a time, until you achieve the desired creaminess.
  5. Gently fold in the chopped fresh basil and toasted pine nuts, ensuring an even distribution throughout the pasta. Give it a final taste and adjust seasoning if needed.
  6. Spoon the creamy avocado and Gouda cheese pasta onto serving plates. Garnish with extra fresh basil, a sprinkle of crushed red pepper flakes if desired, and a drizzle of olive oil for an extra touch of flavor.
